FOR THE GRANOLA: (makes ½ cup)
½ cup shelled hemp seeds (aka hemp hearts)
1 tablespoon granulated erythritol or other low-carb sweetener (see here)
1 teaspoon ground cinnamon
⅛ teaspoon fine Himalayan salt
FOR THE PARFAITS:
1 cup fresh berries (I like to use ½ cup strawberries and ½ cup blueberries)
½ cup granola (from above)
2 cups Coconut Yogurt (here)
Layers of thick Coconut Yogurt (here) with fresh berries and a quick skillet granola: these parfaits are squeaky-clean but taste like dessert! Make them ahead of time and store them in the fridge for quick grab-and-go nutrition you can take to work or play.
Make the granola: Combine the hemp seeds, erythritol, cinnamon, and salt in a small skillet over medium-high heat. Cook for 5 minutes, or until the seeds begin to smell toasty, stirring occasionally. Then flatten the mix down on the skillet, lower the heat to medium-low, and cook for another 3 minutes. Remove from the heat and let cool.
Use a spoon or spatula to scrape and chip at the hemp seed granola, crumble it up, and transfer it to a jar with a lid. Store for up to 15 days in the pantry.
Make the parfaits: Put ¼ cup fresh berries in each of four jars or cups. Sprinkle 1 tablespoon granola over the berries. Layer ½ cup yogurt on top of the granola. Sprinkle another tablespoon of granola on the yogurt and garnish with 1 or 2 more berries.
Enjoy right away or store in the fridge to enjoy within a day or two.
