Garlic Confit

Ingredients

Garlic cloves, peeled (see Tip)

Olive oil or avocado oil

Himalayan salt

Fresh herb sprigs, such as thyme, rosemary, oregano, or sage

Directions

Preheat the oven to 250°F.

Put as many garlic cloves as you like in a small baking dish with a lid (a cocotte is perfect for this), leaving at least an inch of space at the top.

Pour in the olive oil until the garlic is just submerged. Sprinkle in a little salt and place a few sprigs of herbs on top. Cover with the lid and place on a sheet pan to prevent a mess.

Pop it in the oven and bake for 1 hour, or until you can easily pierce the garlic cloves with a fork. Remove from the oven and let it cool to room temperature.

Transfer all of the garlic with the oil and herbs to an airtight glass or ceramic storage container. Store in the fridge for up to 3 months. Always use a clean spoon to remove garlic cloves or oil.
