Deli Skewers

Ingredients

1 large cucumber, cut into ¼-inch slices


4 slices smoked turkey breast, cut into twelve ½-inch-wide strips


12 slices Genoa salami


1/ large Hass avocado, cut into 8 pieces


1/2 cup Green Goddess Dressing (here)


Special equipment:

Bamboo, wooden, or metal skewers

Description

The Earl of Sandwich would have approved of these! After all, he had his supper between bread so as not to leave the gambling table, and these sandwich-style skewers are perfect for one-handed eating, entertaining, or brown-bagging lunch. I love the Genoa salami in these; their saltiness and fattier texture is a welcome companion to the lean turkey.

Any dressing will do for these, but I'm partial to my Green Goddess Dressing. The recipe makes four skewers, the
perfect snack for a pair, but it's easily multiplied to feed a
crowd.

Directions

Thread a slice of cucumber onto the first skewer. Roll a strip of turkey lengthwise and thread it on the skewer. Fold a slice of salami and follow suit.

Repeat this sequence twice more, so there are three cucumber slices, three strips of turkey, and three slices of salami on the skewer. Finish the skewer with two pieces of avocado and one last slice of cucumber. Repeat for the rest of the skewers.

Serve with green goddess dressing on the side or drizzled over the skewers. Wrap in foil or trim the ends of the skewers and store in an airtight container in the fridge for up to 2 days.

SUBSTITUTIONS: To make this recipe AIP-compliant, use the AIP-compliant version of the dressing and replace the salami with prosciutto. To make it coconut-free and seed-free, replace the dressing with Greek Marinade + Dressing (here).
