2 cups filtered water or nondairy milk of choice
1 cup steamed then frozen cauliflower florets (see Note, here)
¼ cup collagen peptides
2 tablespoons cacao powder
2 tablespoons MCT oil (optional)
1 tablespoon ground cinnamon
2 teaspoons powdered erythritol, or 20 drops liquid stevia
2 teaspoons maca root, coffee grounds, or pure vanilla extract (optional)
Pinch of fine Himalayan salt
Cauliflower that’s steamed and then frozen is a smoothie game changer. You get the thick, cold, creamy texture without having to add loads of coconut or frozen banana. Trust me—it works.
Place all of the ingredients in a blender. Blend until smooth.
Store any leftovers in a jar in the fridge for up to 4 days. Shake before drinking as separation may occur.
SUBSTITUTIONS: To make this AIP-compliant, use carob powder instead of cacao powder and use an AIP-compliant sweetener (see here).
You can use either powdered or granulated erythritol in this recipe. Some people prefer powdered because it has less of a cooling effect than granulated, but I haven’t noticed a difference. In fact, this goes for all my recipes—if you have powdered erythritol, feel free to use it in place of granulated!
VARIATIONS: Use coconut milk instead of water for a fatty meal replacement shake.
